/&gt;雞腿兩隻、雞皮、油留用。&lt;br /&gt;番茄一個，大蔥，芹菜各一條，青、紅辣椒適量。&lt;br /&gt;咖喱調味料：&lt;br /&gt;咖喱粉，高湯粉，雞精，花椒，八角，茴香適量，還有幹香葉，香葉要先撕碎&lt;br /&gt;用水煮開，成為醬汁&lt;br /&gt;做法：&lt;br /&gt;1. 用雞精，酒，糖，把切好的雞肉醃好備用。&lt;br /&gt;2. 用雞皮油爆鍋，加入辣椒，蒜頭，大蒜，芹菜，洋蔥，爆香，再加入馬鈴薯同茄子，炒香，用薑蒜爆鍋，把醃好的雞炒，炒得雞的表皮略為發白就可以，加入預先煮好的醬汁，放入原先的煲裏燜煮，這樣做是想把雞的肉汁都鎖在裏面，不至於在燜的時候肉汁流失。&lt;br /&gt;3. 文火燜到馬鈴薯用筷子都可以夾爛的時候就可以加入青椒、番茄，並可以適量的加入蠔油調味、會有畫龍點睛的作用。&lt;br /&gt;4. 最後在食用之前才加入用牛奶，雞蛋，太白粉配成的芡汁勾芡關火就成。&lt;br /&gt;小貼士：&lt;br /&gt;1. 咖喱要解辣，就要加牛奶，要味道豐富一點，在後面稍微加入少許蠔油，就會有畫龍點睛的作用。&lt;br /&gt;2. 雞嫩味濃，馬鈴薯入味夠粉是因為食材切成波紋狀。&lt;/span&gt;&lt;div 年長成，全長約 40cm。&lt;br /&gt;分佈於從日本海、阿拉斯加、美國大陸沿岸到墨西哥的寬廣北太平洋&lt;br /&gt;材料：(烤焗)&lt;br /&gt;秋刀魚&lt;br /&gt;檸檬汁 適量&lt;br /&gt;鹽 適量&lt;br /&gt;胡椒鹽 適量&lt;br /&gt;做法：&lt;br /&gt;秋刀魚洗淨去鱗去內臟，用廚房紙吸乾水份&lt;br 他化學物質。&lt;br /&gt;硫酸帶刺激性 (irritant)，會令我們的眼睛流出淚水&lt;br /&gt;如何令到我們切洋蔥時眼部不受刺激 ?&lt;br /&gt;切洋蔥時，由於洋蔥有一種揮發物質，常使切菜的人流淚。此外，有科學家認為洋蔥遭破壞時產生刺激性氣體，是一種自衛的表現&lt;br /&gt;防止的方法是：&lt;br /&gt;1.          切洋蔥前，把切菜刀在冷水中浸一會兒，再切時就不會因受揮發物質刺激而流淚。&lt;br /&gt;2.          洋蔥對半切開後，先泡一下涼水再切，不會流淚&lt;br /&gt;3.          放微波爐稍微叮一下，好去皮，切起來也不流淚&lt;br /&gt;4.          洋蔥浸入熱水中 3 分鐘後，再切&lt;br /&gt;5.          戴著泳鏡切洋蔥 (這個好好笑 !!)&lt;br /&gt;6.          屏住呼吸切，因爲洋蔥的味道是通過鼻子傳到腦神經，才讓眼睛流淚的洋蔥的氣味是經鼻子刺激到眼睛的。所以只要把鼻子塞上紙巾切，就沒事了&lt;br /&gt;7.          切洋蔥時可以在砧板旁點支蠟燭可以減少洋蔥的刺激氣味。&lt;br /&gt;效果不錯 !
